Apple Pecan Cake Bars

These cake bars are so yummy, you’ll be surprised to discover that they’re actually really good for you – well as far as cake goes that is!

The stewed apple adds a lovely sweetness, which means only a small amount of coconut sugar is needed, and it also ensures the cake stays light and moist. Perfect for lunchboxes or when those hanger levels get close to boiling point!

What’s In It?

  • 5 tbsp Stewed Apple (we stewed our apples with Coconut Sugar and a teensy bit of cinnamon)
  • 3 tbsp Coconut Flour
  • 1 Pack of Pistachio Purition powder (but any protein powder would do)
  • 1 tsp Baking Powder
  • 2 tsps Coconut Sugar
  • 2 Eggs
  • Pecans to decorate

How Do I Make It?

Put all of the dry ingredients into a mixing bowl and stir to combine. Stir in the eggs and then add the apple puree. It will look quite gloopy at this stage, but don’t worry!

Pour the mixture into a greased loaf tin and place in a moderate oven for approximately 35 minutes.

Allow to cool for a few mins and then transfer to a wire rack to cool completely.

Cut the loaf into cake bars (you choose the size!) and top with pecans.
