Coconut Date and Goji Berry Flapjacks

These Coconut, Date and Goji Berry Flapjacks are absolutely amazing and I have to really control myself not to eat the whole batch. However, if like me, you find yourself having the odd one too many, fear not as they contain some pretty healthy superfoods and a rather extra special secret ingredient 🙂

What’s In Coconut, Date and Goji Berry Flapjacks?

  • 250g Coconut Jam
  • 400g Porridge Oats
  • 100g Chopped Dates
  • 50g Goji Berries
  • 100g Desiccated Coconut
  • 200g Unsalted Butter

How Do I Make Coconut, Date and Goji Berry Flapjacks?

Line a shallow, rectangular baking tin with greaseproof paper and preheat the oven to a moderate temperature. Place the Coconut Jam, Butter, Goji Berries and Dates in a saucepan over the hob and heat until everything has melted and the fruit starts to go sticky and caramelise. Be careful at this point as the mixture can easily burn and that will make the flapjacks taste bitter, so you are best off continually stirring the mixture.

Remove from the heat and stir in the oats and coconut, making sure everything is well combined and no part of the mixture is dry.

Pour the oaty mixture into your prepared tin and press down with a spoon.

Bake in the oven for approximately 20-25 minutes or until the top of the flapjack is golden brown.

To make sure the flapjacks slice evenly you will need to score them with a knife as soon as you remove them from the oven. Depending on how big you want your flapjacks to be, you should get approximately 15-20 flapjacks.

When they are completely cool, run over the scored lines with a knife and using a spatula remove them from the tin.

Alternatives

Try adding your favourite nuts, seeds or any other dried fruit. Or for something extra decadent why not try chocolate flavoured coconut jam and replace the unsalted butter with cacao butter!
