Popeye Hummus

Happy International Hummus Day! Yep seriously there really is a day celebrating all things hummus, so I thought it would only be appropriate to come up with a recipe in honour of this grand occasion 😉

I’ve packed in some right good stuff in this recipe and although I can’t promise it’ll give you muscles like Popeye, it does contain spinach and it does contain Olive Oyl (get it?!?!).

What’s In It?

  • 400g Tinned Chickpeas
  • Juice of 1 Lemon
  • Big handful of Spinach Leaves
  • 2 cloves of Garlic
  • 3 tbsp Olive Oil
  • 1 tbsp Nut Butter
  • 1 tsp Coconut Amino (or Soy Sauce)
  • 1/2 tsp Moringa Powder (optional)

How Do I Make It?

Put all of the ingredients (except the olive oil) into a food processor and blend until smooth. It will be really thick and stodgy, so when the blades start to get clogged up slowly add the olive oil. Continue blending until you have a creamy, smooth paste. And that’s it!

I like to sprinkle smoked paprika on the top of mine and serve with toasted pitta bread, kale crisps and veg sticks.
