Spiced Plum Flapjacks

There’s nothing more autumnal than a spiced plum is there? And yes OK I know we’re not quite there yet, but jeez it won’t be long and the weather has certainly made it feel as though Autumn is on its way a lot sooner than expected!

I’ve used my absolute favourite type of plum (Victoria plums for the win!) in this recipe for Spiced Plum Flapjacks, as they have such a sweet juicy taste and they really take me back to picking them from my Granddad’s trees in his garden when I was younger. Of course you can try using any variety of plum, but I bet your bottom dollar they won’t be as good!

What’s In My Spiced Plum Flapjacks?

  • 400g Porridge Oats
  • 250ml Honey
  • 200g Unsalted Butter
  • 4 Plums
  • 1 tsp Ground Ginger
  • 1 tsp Mixed Spice

How Do I Make Spiced Plum Flapjacks?

Chop three of the plums into small pieces and put to one side. The remaining plum should be sliced into wedges and also put to one side to use later.

Heat the butter, honey and ginger in a saucepan until everything has melted, then remove from the hob and stir in the oats and chopped plums.

Put the plum wedges in a bowl with the mixed spice and shake until they are fully coated.

Spoon the oat mixture into the cups of a 12 hole cupcake tin and top with a spiced plum wedge.

Bake in a moderate oven for 20 minutes, then remove and leave in the tin to cool.

TOP TIP – This is delicious as a comforting pud, so if you really can’t wait for them to cool down, carefully scoop them out of the tin and serve warm with a dollop of crème fraîche!
