And The Winner Is…?

I can’t quite believe that the day has finally come for me to announce the winner of our #cocotarget competition and I know it sounds a little bit clichéd, but it has honestly been one of the hardest decisions we’ve had to make.

All three recipes; the Mango Lucuma Cheesecakes, the Paleo Coconut Sponge and the Raw Coconut Cacao Matcha Superfood Bars have really impressed us with their creative use of Cocofina products and we’d like to thank all three finalists for sending in such high quality, healthy and downright delicious recipes for us to make, drool over and best of all EAT!

Before I announce the winner I feel it is only fair to talk a little bit about the judging process and how we came to the very, very tough decision of who should win the amazing Target Human Performance Fitness Holiday.

Our judging panel were asked to score each recipe out of 5 (5 being the highest) on the following 6 categories:

  1. Tug of WarHow easy they are to make.
  2. Use of Cocofina products.
  3. Taste
  4. Look
  5. Versatility
  6. Healthiness

Whilst one recipe may have excelled in some categories, it may not have scored quite so highly in others. The scores were then added up and the recipe with the highest score is our official #cocotarget competition winner.

So, without further ado, let’s have a drum roll please….

Our judges loved Libby’s Superfood Bars and they scored highly in all 6 categories. Incredibly easy to make, packed full of super healthy ingredients, fantastic use of 3 Cocofina products with a heavenly taste to boot, the thing that just pipped Libby’s recipe ahead of the others was it’s versatility.

When Libby sent us the recipe she told us:

“These bars are delicious for snacking or served as a pudding for guilt-free indulgence! The two top layers are also completely optional and so if short for time you can’t go wrong with the raw brownie base!”

And she’s right!

The brownie base is delicious in its own right and was so quick and easy to make; simply blend, pat and bung in the freezer for a couple of hours. Job done!

Raw Coconut Superfood BarWe were also amazed by how well the Pear Chia Matcha jam worked, as we have only ever made chia jam by cooking and reducing it in a saucepan over the hob. Not so with Libby’s. Her version required a very ripe pear, which is mashed up together with the chia seeds and matcha powder and that is literally it. The juice from the pear is enough to expand the chia seeds and produce a jam-like layer that helps add a distinct taste and texture to the bars that we thought worked really well and showed great creativity.
