Santa probs gets a bit bored with the same old food being left out for him each year. I mean I’m sure he loves a mince pie as much as the next man, but there’s only so many he can pack away in that tummy of his. So, with Christmas Eve only a couple of nights away I’ve pimped up the traditional mince pie and of course put a flapjacky twist on it with these incredible Mince Pie flapjacks. Instead of pastry I’ve created a flapjack pie case and filled it with my recipe for Healthy Christmas Mincemeat, Santa’s gonna get a right old treat when he comes down the chimney I can tell you!
What’s In Mince Pie Flapjacks?
- 300g Oats
- 150g Unsalted Butter
- 150ml Honey
- 350g Mincemeat
How Do I Make Mince Pie Flapjacks?
Melt the butter and honey together in a saucepan, stirring continuously so the two ingredients combine together.
Remove from the heat and stir in the oats until well covered.
Spoon the oat mixture into a 12 hole bun tin and flatten down to the edges using your fingers. Create a dip in the centre of each by using your knuckle.
Fill with one spoonful of mincemeat, I used my own homemade version but of course you can use shop bought.
Bake in a moderate oven for 15 minutes.
Allow to cool completely before removing carefully from the tin.
TOP TIP – Heat these Mince Pie flapjacks up and serve with custard for a delicious Christmas dessert.
