Not only is it National Baking Week this week, but also National Chocolate Week, so how could I let this go by without conjuring up a cheeky chocolate flapjack recipe for you all!?!
And never one to do things by half I’ve not just got chocolate for you, oh no I’ve not even got double chocolate for you… I’ve gone the fully whammy and done TRIPLE chocolate flapjacks for you!

What’s In It?
- 200g Oats
- 100ml Coconut Oil
- 50g Chocolate Protein Powder
- 50g Dates
- 50ml Maple Syrup
- 50g Vegan Chocolate
- 20g Cocoa Nibs
How Do I Make It?
Preheat the oven to 160ºC and grease the holes of an individual mini muffin tin.
Put the coconut oil in a small saucepan and gently heat until it has melted.
Remove the saucepan from the heat and stir in the maple syrup and chocolate protein powder. You made need to whisk it a bit to make sure there are no lumps of protein left in there – no one needs to be biting into a lump of cooked protein powder!
Chop the dates into small pieces and then mix together with the oats in bowl.
Pour in the chocolate coconut oil mixture and stir until well combined and the oats are completely covered.
Using two teaspoons, carefully spoon the mixture into the holes of the mini muffin tin. The mixture is quite crumbly so it helps to press the back of one of the spoons on top to compact the mixture down and hold it together while it cooks.
Bake for 15 minutes or until the tops have turned golden brown.
Leave to cool completely in the tin before removing.
While the flapjack bites are cooling, break the chocolate into chunks and place in a bowl over a small saucepan of boiling water.
Stir until the chocolate has melted and then spoon over the tops of the flapjack bites.
Sprinkle cocoa nibs on top of the melted chocolate and there you have it… Triple Chocolate Protein Flapjack Bites!
