Mince Pie Flapjacks

If you love mince pies, then you are going to LOVE our reecipe for mince pie flapjacks! We’ve only gone and sandwiched some Christmas mincemeat in a yummy ‘healthy-ish’ flapjack, and they are super delish. We’ve used our own Healthy Christmas Mincemeat, but you could use your own recipe, or even the shop bought variety – either way it tastes amazing. We suggest eating them with a rather large glass of mulled wine – well ’tis the season to be jolly, after all!

How Do I Make Mince Pie Flapjacks?

Simply melt the butter and honey together in a saucepan on the hob. Once melted, remove from the heat and stir in the porridge oats, making sure they are all completely coated in the syrup.

Put half the mixture in a shallow baking tin and pat down until smooth and even. Spread the mincemeat over the top and then pour over the remaining porridge mix. Again pat down until smooth and then place in a moderate oven for about 25 minutes, or until the flapjack is golden brown in colour.

Using a sharp knife score out the lines of your flapjacks and then leave to cool in the tin. When cool, go over the lines and then remove with a palette knife.

Top Tip These can be warmed up and served with a dollop of cream for an extra special festive treat.
