Gingerbread Latte Flapjacks

We’re kicking off the first of our festive flapjacks with this gorgeous Gingerbread Latte recipe. The inspiration for these comes from the high street coffee chains who offer many a Christmas themed hot drink in the run up to the big day. They’re sweet, comforting and with just enough of a ginger kick to warm you up on those cold, frosty mornings. We’ve used Beanies Gingerbread Flavour Coffee to create a subtle latte taste, but you could use any type of coffee you like.

What’s In My Gingerbread Latte Flapjacks?

  • 500g Porridge Oats
  • 200g Unsalted Butter
  • 200ml Honey
  • 2 tbsps Ginger Flavoured Instant Coffee
  • 4 Stem Ginger balls
  • Crystallised Stem Ginger to decorate

How Do I Make Gingerbread Latte Flapjacks?

Chop the stem ginger balls into smallish pieces and place in a saucepan with the honey, butter and coffee granules. Heat on the hob until everything has melted and the mixture has turned a caramel brown colour.

Remove from the heat and stir in the porridge oats, making sure they are completely covered in the syrup.

Pour into a greased shallow baking tin and cook in a preheated moderate oven for approximately 20-25 minutes.

Remove from the oven and using a sharp knife mark out the lines of your flapjacks.

When cooled, score over the lines and remove from the tin.

Decorate with crystallised stem ginger and enjoy your gingerbread latte flapjacks with a steaming cup of your favourite coffee!
