Vegan Granola

Sometimes a recipe I was intending to create goes wrong and this was precisely what happened with this granola. As I’m sure you all know I’m rather partial to a flapjack, but they can be tricky little blighters if you don’t get the texture quite right. This started off as flapjacks, but when I tried to remove it from the tin it crumbled into pieces. Waste not want not I say so abracadabra GRANOLA!

A lot of granola recipes call for the use of egg white to help bind the mixture, so this is slightly more crumbly than normal, but it does however make it suitable for vegans. Plus, and this is the biggest plus of all, it totally tastes like you’re eating cake for breakfast, which I am ALL over!!!!

When life gives you floppy flapjacks… turn it into granola!

What’s In It?

  • 300g Oats
  • 200ml Maple Syrup
  • 150ml Coconut Oil
  • 50g Pumpkin Seeds
  • 50g Sunflower Seeds
  • 50g Sesame Seeds
  • 40g Dried Cranberries
  • 1 tbsp Chia Seeds

How Do I Make It?

Simply mix all of the ingredients together in a bowl, spread out onto a baking sheet then bake in a moderate oven for 25 minutes.

Remove from the oven and allow to cool whilst still on the sheet.

Once cool, break into pieces and store in an airtight container until you are ready to eat.
