Coconut Hummus

If you’re a fan of all things hummus, then you are going to LOVE this! This version uses organic natural coconut vinegar instead of lemon juice, which gives it a really unique yummy taste.

How Do I Make It?

Drain the chickpeas and rinse thoroughly under cold running water. Use a hand blender to blend the chickpeas and vinegar together until it is well combined. Add the water a tablespoon at a time, blending in between until the mixture is smooth or to your desired consistency. Add the coconut oil along with the salt and pepper and one teaspoon of the smoked paprika then blend again. Spoon the hummus into a serving bowl and sprinkle the remaining smoked paprika over the top.

You could also try halving the amount of chickpeas and replacing with ground coconut for a sweeter taste. Or why not drizzle with some extra coconut oil for the ultimate coconut experience. Perfect served with falafel, couscous or for a sneaky finger dip when you happen to be passing the fridge!
