Confession time…I’ve made Blueberry and Lemon Flapjacks before, but don’t shoot me, because these blueberry flapjacks have had a lovely little twist with the addition of a blueberry dipping jam that sends them absolutely sky high on the taste scales.

What’s In Blueberry Flapjacks?
- 40og Porridge Oats
- 275g Blueberries
- 250ml Honey
- 200g Unsalted Butter
- Zest of 1 Lemon
How Do I Make Blueberry Flapjacks?
Blend 200g of blueberries until smooth (ish) and put in a sealed container and store in the fridge overnight.
Melt the butter and honey together in a saucepan, then remove from the heat and stir in the oats and lemon zest.
Place a spoonful of oat mixture into the squares of an individual brownie tin, making sure to pat down, then place 4-5 blueberries on top of this and cover over with another spoonful of oat mixture. Continue until you’ve run out of mixture and then bake in a moderate oven for 20 minutes.
Remove from the oven and slice diagonally to create two triangles, then leave to completely cool in the tin.
Serve with a pot of the blueberry dipping sauce and get dunkin’!!
TOP TIP – Why not have a go at making other berry jams…the key is to blitz, pot up and then pop in the fridge overnight to thicken.
