Granola Topped Apple Muffins

I wanted to set myself a bit of a baking challenge this week, so I decided to get all experimental and try to come up with something yummy without using eggs or butter. Cue these vegan friendly, dairy free, refined sugar free muffins that still have ALL the taste!

You’ll notice that I’ve topped them off with some of my homemade granola – yes of course you can use shop bought stuff, but seriously…it won’t be as good!

What’s In It?

  • 250g Stewed Apple (4 cooking apples, 2 tbsp Agave Nectar)
  • 250g Wholemeal Self Raising Flour
  • 100g Walnut Pieces
  • 50ml Agave Nectar
  • 50ml Coconut Oil
  • 1 tsp Baking Powder
  • Homemade Granola to top

How Do I Make It?

Core, peel and chop the apples and put into a saucepan with 2 tbsp of agave nectar. Simmer for roughly 20 minutes, until the apple has softened. Remove the pan from the heat, allow to cool for a bit and then blitz to a pulp with a hand blender. The stewed apple makes a great replacement for butter and it is this that will add moisture to your muffins.

In a separate bowl mix together the flour, walnut and baking powder, then add the stewed apple, melted coconut oil (30 seconds in the microwave should do it) and the agave nectar. Mix well – I like to use my KitchenAid for this as it really makes sure the ingredients fully combine together, but of course you could do it be hand.

Spoon the batter into muffin cases, you should have enough to fill a 12 hole tin, and then top with a spoonful of granola.

Bake in a moderate oven for approximately 25 minutes.
